Position Summary:

The Senior Manager, Food and Beverage for the Coliseum restaurant is responsible for the overall operation of the restaurant, bar and the pool. Responsible for making sure all supplies are available for food preparation and service. Ensures that the highest level of customer service is maintained.

Job Duties:

  • Responsible for the overall operation of the restaurant and grill serving the pool.
  • Ensure all supplies are available for food preparation and service.
  • Ensures that the highest level of customer service is maintained.
  • Hire, train, direct and supervise management staff for the restaurant as needed.
  • Development and implementation of a seating program to ensure the highest level of service during all dining hours.
  • Ensure that menu items are prepared and presented accurately and to the highest quality standards.
  • Maintain a professional working relationship with all departments throughout the resort interacting with the restaurant.
  • Observe daily conditions of all physical facilities and equipment in the restaurant; make recommendations for corrections and improvements as needed.
  • Forecast business volume including covers and revenues.
  • Prepare and report on the overall effectiveness and status of department programs and projects. 
  • Plan, implement and manage the operational, budgetary and human resource activities of the department to ensure effective operations and achievement of goals.  
  • Participate as a team player with all departments.
  • Be a leader and a role model to all employees.
  • Other duties as assigned.

Minimum Qualifications / Other Expectations:

 

  • College degree in a related field preferred.
  • 3-5+ years restaurant management experience, preferably in a hotel/resort environment.
  • Thorough knowledge of all health and labor regulations related to restaurant operation.
  • Excellent leadership, interpersonal communication and negotiation skills.
  • Ability to use appropriate interpersonal styles and methods to guide employees toward goal achievement.
  • Strong analytical, organizational, management and computer skills.
