Position Summary:

Manage day-to-day operations of the restaurant including service and staff. Ensure staff maintains a high level of customer service.  Maintain restaurant in accordance with company policies, procedures, liquor laws, and health and safety standards.  Review operation records and reports and reports on profitability.  Identify food and beverage needs and places orders with suppliers.  Resolve customer complaints.

Job Duties:
  • Moving between multiple Food and Beverage outlets providing management support where needed. 
  • Develop and maintain an elegantly appointed environment, with superior staff dedicated to providing an attentive, distinctive experience for breakfast, lunch, or dinner.
  • Maintain a friendly yet unobtrusive manner with all guests. 
  • Ensure the correct and consistent service techniques for various meal periods will be demonstrated by all staff members in accordance with hotel standards.
  • Maintain par levels of all materials and supplies and assure their availability.
  • Control usage of all food and beverage items and appropriate usage of equipment and tools.
  • Observe daily conditions of all physical facilities and equipment in the restaurant; makes recommendations for corrections and improvements as needed. 
  • Prepare staff schedules which allow for appropriate service while controlling labor costs and overtime.
  • Communicate with other departments to ensure a supporting team of professionals.
  • Communicate with the Chef and General Manager/Food and Beverage Director, Event Director and Marketing Director to discuss menus, marketing strategies, trends, events, and guest comments and concerns.
  • Ensure a safe working environment for all employees and guests/customers within the restaurant.
  • Forecast covers and revenues and then schedules accordingly.
  • Develop staff for future advancement. Recommend salary adjustments, transfers, promotions and dismissals.
  • Prepare daily and weekly payroll as required by the Finance.
  • Prepare closing paperwork and shift reports and other related documents.
  • Understand all food and beverage items offered, including ingredients, methods of preparations and proper service. Also, an expert knowledge of wines and spirits. 
  • Write and deliver performance evaluations for all employees.
  • Maintain a daily log for communication between restaurant staff and with upper management.
  • Attend and participate in all required meetings.
  • Promote teamwork and foster a harmonious working climate demonstrating good communication skills and genuine care for your employees.
  • Promote good public relations and handle complaints or concerns of guests.
  • The ability to recognize and deal with potential intoxicated, disruptive or undesirable guests.
  • The ability to identify and respond properly in any hotel emergency or safety situation.
  • Hire, train, supervise and discipline all restaurant staff; ensure appropriate staffing levels.
  • The ability to perform other tasks or projects as assigned by hotel management and staff.
Minimum Qualifications / Other Expectations:
  • 2 – 3 years in restaurant management, with a minimum 1 year upscale dining experience
  • Computer literate
  • Thorough knowledge of service, cost control in F&B, labor controls, menu writing, maintenance, merchandising and accounting
  • Management serv-safe certification (Management’s Food Handler Card)
  • Responsible Alcohol Service - Certification on how to identify intoxicated/unruly guests (must have within 30 days of taking the Restaurant Manager Position)
