Position Summary:

Jr. Sous Chef will assist in various areas of the kitchen doing prep, cooking on the hot line or pantry, reading ticket orders, bake shop, assisting in the Market Place, following recipes and plating guidelines consistently, preparing all foods to the Hotel Irvine’s culinary standards, expediting on the line as needed, ability to maintain composure under stressful circumstances.

Job Duties:

A Jr. Sous Chef must be knowledgeable in the Culinary field with the ability to multitask, work well with co-workers, able to work independently and supervise cooks, complete assigned tasks as directed.

Daily Duties include but not limited to:

  • Vegetable prep, plating up breakfast, lunch or dinner, put away and rotate stock as needed, assisting co-workers as needed.
  • Searing proteins to be used in banquets and/or restaurant, re-therm/cooling products to proper temperatures following HACCP guidelines.
  • Finish cooking and plate according to established standards and guidelines, generating requisitions for goods and product inventory.
  • Absence of Sous Chef a Jr. Sous Chef assumes the responsibilities and duties of Sous Chef.
  • Liaison between front of the house and cooks, ordering product, butchering proteins, administer discipline as needed, train and develop staff, develop daily specials.
  • Familiar with hotel policies, fundamentals of operation and Hotel Irvine’s mission and vision statements.

Minimum Qualifications / Other Expectations:

To perform the job successfully, an individual must be able to do each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. Education and/or Experience- 2 years’ experience as a lead line cook is mandatory.

 

Mathematical Skills – Basic Math

 

Language Skills- Bilingual in English/Spanish is helpful. Ability to read and understand simple instructions.

 

Reasoning Ability- Ability to assess situations that arise and make thoughtful decisions.
