Position Summary:

Oversee the management of multiple outlets for the business.  Prepare and manage the operating budget including profitability assessment, inventory, operating expenses, labor, and capital improvements (e.g., equipment replacements or additions in anticipation of operational growth).  Ensure consistently high-quality customer service, food products, and presentation while balancing budgetary guidelines. Stay ahead of trends and keep up-to-date knowledge of current trends in the food-service industry to maintain a fresh, innovative and appealing menu. Manage various culinary-related activities including marketing, public relations, estimating food consumption, food purchasing, recipe development as well as menu planning and development. Maintain proactive and positive interaction with customers. Oversee special culinary events as needed.

  • Multiple-fine dining and casual dining locations, including Fashion Island Hotel’s Banquet/Private Dining spaces, Oak Grill Restaurant, Aqua Lounge, In-Room Dining, Pool, “Coastal Catering”, various MarketPlaces and The Villas at Fashion Island “Dine-In” initiative.
Job Duties:
  • Responsible for the budget preparation, marketing and public relations for assigned restaurants.
  • Ensure the correct and consistent preparation and presentation of all food items.
  • Plan and develop recipes and menus for the hotel considering factors including product availability, service cost, marketing conditions, and the number of guests being served.  
  • Establish and maintain appropriate food portions with respect to the hotel's pricing policy. 
  • Assign food pricing on daily menus that result in net profit for the food cost area and participate in making decisions regarding printing, layouts, posting and distribution of menus.
  • Lead the kitchen management to ensure that labor and inventory is being managed within budget.
  • Develop,train, coach performance and provide daily supervision of kitchen staff.
  • Foster a culture of care and collaboration. Create a sense of fairness among the kitchen staff to achieve a high level of morale and motivation while minimizing turnover.  
  • Coordinate with internal departments on special functions including costing, staffing, food preparation, and presentation.  
  • Ensure sanitation standards, safety, and HACCP as set forth by the hotel. 
  • Effectively communicate with internal departments, management and customers; participate in meetings as required.       
  • Respond properly in any hotel emergency or safety situation.
  • Perform other related duties as assigned or requested.
  • Special involvement in Coastal Catering- hands-on as required due to business needs.
     
Minimum Qualifications / Other Expectations:
  • Ten years of Culinary leadership experience in a luxury hotel required
  • Proven experience in catering and banquets required
  • Proven experience in the administration side of kitchen management.
  • Experience in creating and implementing new recipes.
  • Must possess a high level of creativity and high-quality standards.
  • Strong leader, communicator and trainer.
  • Knowledge of food costing, menu costing, food photography, and detailed menu description.
  • Culinary School Graduate preferred or equivalent experience
  • Public Relations to guest and Media 
  • Computer skills
  • Google Apps experience a plus
  • Ability to move
