Position Summary:

Train and manage kitchen staff; ensure consistent quality of food products and presentation; ensure proper equipment operation/maintenance; and ensure proper safety and sanitation in kitchen.  Supervise assigned staff according to company standards.  May be required to cook or supervise production of variety of cuisine.

Job Duties:

  • Verify that all scheduled staff is present and signed-in.
  • Requisition all food items needed daily from the food storeroom in concert with all cooks.
  • Supervise all employees during the set-up, service and breakdown for each meal period.
  • Verify the taste and presentation of food produced prior to meal periods.
  • Follow all control and key procedures.
  • Communicate and delegate the production schedule for the day, collating quantities to be produced from the forecast and for the next day's mise en place.
  • Expedite orders on the line and ensure quality.
  • Inspect and supervise the sanitation and maintenance of equipment.
  • Ensure that proper work orders are made to repair kitchen equipment.
  • Control labor and food costs.
  • Ensure training is occurring on an ongoing basis with all employees.
  • Maintain discipline and motivation for employees.
  • Perform daily storeroom inspections of all walk-in refrigerators to ensure that proper rotation of food is done.
  • Assist the storeroom Receiving Clerk in reviewing the quality of goods received.
  • Review the refrigeration areas of the kitchen and store rooms to ensure the proper usage of merchandise.
  • Assume responsibility for the quality of food prepared in each kitchen.
  • Inform and keep the Executive Chef up-to-date on problems and irregularities and recommends courses of action.
  • Monitor and control the labor utilized to produce a quality product while adhering to labor standards.
  • Monitor and control the food cost by creative menu planning, keeping waste to a minimum and maintain low pars.
  • Assist in the development of a safe and clean working environment.
  • Ensure kitchen employees are storing foods properly.
  • Assume full responsibility in the absence of the Executive Chef and/or Executive Sous Chef.
  • Participate in the scheduling and performance evaluation of kitchen employees.
  • Respond properly in any hotel emergency or safety situation.
  • Perform other tasks or projects as assigned by hotel management and staff.
  • Maintain full knowledge of Hotel Standards.
  • Be certified in Food Service Sanitation.
  • Maintain the ability to execute Alternative Cuisine.

Minimum Qualifications / Other Expectations:

  • Requires two year Associate college degree in Culinary Arts.
  • Requires 5 years of experience in a high-volume, multi-kitchen capacity.
  • Must possess a high level of creativity and high quality standards.
  • Requires previous managerial experience; strong leader, communicator and trainer.
  • Sushi making experience.
