Position Summary:

This position will be responsible to service local corporate and social catering contracts.  The catering sales team (consisting of the Asst. Director and the Catering Sales Manager) will book corporate and social contracts and within seven days of providing a counter-signed contract to the client the team will introduce the service manager as the point of contact.  This role will focus on the majority (66%) of the files being handed over from the Asst. Director who has the bandwidth and market to make the largest gains in new sales business.  The Asst. Director will still service events from the top repeat accounts and any VIP events as deemed appropriate.  The majority of events to be turned over will be one-time events and social occasions that require significant time out of the office.

Job Duties:

  • Lead, implement and maintain a management philosophy aligned to Pelican Hill five star standards.
  • Contribute to Catering department revenues and profitability aligned with plan goals.
  • Knowledge of average checks and required target revenues and ability to negotiate mutually beneficial solutions to price and process objections
  • Conduct tours of the property with meeting planners and potential clients.
  • Comfortably entertain appropriate clients.
  • Knowledge of contractual agreements and legal implications.
  • Finalize all bookings maximizing all revenue potential by up-selling in all revenue producing areas.
  • Develop creative and attractive menu presentations for potential clients.
  • Keep Director of Meetings and Special Events promptly and fully informed of all unusual matters so prompt guest recovery can occur.
  • Liaise with other departments to ensure quality of guest satisfaction.
  • Attend and participate in all required meetings.
  • Well versed in all banquet space and capabilities of a competitive market.
  • Review all function space with the Banquet Manager and Head House attendant in regards to any requirements for a group function.
  • Respond properly in any hotel emergency or safety situation.
  • Perform other tasks or projects as assigned by hotel management and staff.
  • Assist in the day-to-day management of the catering sales operations.

Minimum Qualifications:

  • Ability to create inspirational and unprecedented experiences
  • Minimum 2+ years of catering experience with exemplary performance results (Luxury experience preferred).
  • Basic Food & Beverage service and knowledge.
  • Excellent reading, writing and oral proficiency in the English language.
  • Strong interpersonal skills.
  • High level of creativity.
  • Excellent communication skills.
