Position Summary:

Oversee the day-to-day activities of the bar and lounge, including: forecasting future business and strategizes; ensure appropriate staffing levels and scheduling staff accordingly; control reservations and seating of the bar & lounge with regards to service standards; control labor and overtime costs; participate in all inventories directly involved with the operation of the restaurant; managing POS systems and make appropriate changes for accurate sales records and reports; participate in corporate or hotel based marketing concepts.  

Job Duties:

  • Creates and maintains a weekly, monthly and seasonal cocktail and beverage program along with the culinary team and Director of Food Services.
  • Demonstrate thoughtfulness in service and create a “PEAK” experience for all guests.
  • Continuously develop a strong knowledge of business and cultural happenings in the Orange County area.
  • Partner with the culinary team on menus for the bar and implement new items based on customer feedback.  
  • Be knowledgeable and communicate food and beverage items offered, including ingredients, methods of preparation to customers and employees.
  • Promote teamwork to further enhance the guest experience and provide a high level of customer service.
  • Train, coach and develop employees.  Complete and conduct performance evaluations for all employees.
  • Facilitate large party events from contract to execution with the assistance of the culinary team.
  • Plan and facilitate events, while partnering with F&B and culinary teams to ensure a high level of execution and service is provided.
  • Control usage of all food and beverage items and appropriate usage of equipment, tools and service equipment.  Observe daily conditions of all physical facilities and equipment in the restaurant.  Make recommendations for corrections and improvements as needed.
  • Ensure compliance with sanitation and safety standards maintained for guests and employees.  Ensure that all aspects of the restaurant are visually appealing and attractive to guests.

Minimum Qualifications:

  • College degree preferred, with an emphasis in hotel and restaurant management, preferred.
  • Minimum 1 - 2 years front of house food and beverage management experience. Lounge or high volume bar required.
  • Extensive knowledge of the hospitality industry and food and beverage management, including cost and inventory control, labor controls, menu writing, maintenance, merchandising and accounting.
  • Expert knowledge of wine and spirits.
  • Ability to present information in one on one or group settings.
  • Posses excellent communication, leadership, organizational and multi-tasking skills.
  • Strong technical skills (computer, POS, billing, reports, Google Apps, MS Office, etc.)
  • Valid Serve Safe, CA food handlers card required.
