Position Summary:

The Director of Outlets is a key position in the Food and Beverage operation, overseeing the day to day operation in the outlets. This position requires strong leadership, organizational, communication and customer service skills.  The ideal candidate is a person who is truly passionate about people and hospitality, a person who is connected to our local community, who can help bring positive ideas on how to better serve our guests and maintain & enhance employee satisfaction. The Director of Outlets will be tasked with assisting management and staff in Eats, Marketplace, Wet Bar and Red Bar providing an exceptional guest experience. This role calls for a person with an eye for detail on the floor and when inspecting our staff. This person will champion all Marketing initiatives within the Outlets to help drive revenues. Will support in the planning and management as appropriate in order to achieve customer satisfaction, quality service, compliance with corporate/franchise policies and procedures in the areas of his/her responsibility.

Job Duties:
  • A Mentor first, a Leader, a listener and a motivator of all crew members.
  • Lead, mentor, and develop direct reports in management/supervisory positions
  • Exceptional F&B product knowledge in order to train staff and communicate with patrons 
  • Hire, train, supervise and lead all outlets staff.
  • Control reservations and seating and manages OpenTable reservation system 
  • Anticipate, in advance, all materials and supplies and assure their availability.
  • Control usage of all food and beverage items and appropriate usage of equipment, tools and service equipment.
  • Observe daily conditions of all physical facilities and equipment in the outlets; makes recommendations for corrections and improvements as needed.
  • Ensure a safe working environment for all employees within the restaurant.
  • Assist with staff training and hold all staff accountable
  • Rewarding and disciplining employees through verbal and written communication
  • Assist in the completion and conducting performance evaluations for all employees.
  • Have an eye for detail in all aspects of the outlets 
  • Comply with all ABC rules and regulations. 
  • Follow all company cash flow procedures.
  • Complete all opening and closing procedures on a daily basis in his/her areas of responsibility 
  • To be knowledgeable with all services and facilities offered by the hotel.
  • Comply with all company grooming standards 
  • Follow proper payroll, tip and uniform procedures
  • Ensure consistency in service on a daily basis
  • Perform other tasks or projects as assigned by hotel management and staff.
  • Support and inspire promotions and marketing initiatives
  • Keeping staff apprised of all marketing and programing for the hotel
  • Must read, complete knowledge of our daily, weekly and month end protocol
  • Understand and comply with all information in Hotel Irvine’s Employee Handbook
  • Assist with maintaining proper par levels on inventory in his/her areas of responsibility
  • Be able to do accurate inventory
  • Understand and follow the California Labor Laws
  • Direct the implementation of the payroll, reports, forecasts, inventory and budget for outlet operations
  • Prepare staff schedules which allow for appropriate service while controlling labor costs and overtime in accordance with LMS guidelines.
  • Communicate with other departments to ensure a supporting team of professionals.
  • Fully proficient with the Micros POS system
  • Assist with customer requests, including email receipts, invoices, pre-orders, deliveries
  • Resolve customer complaints as appropriate to maintain a high level of customer satisfaction
  • Coordinate outlet operations with other hotel departments to ensure efficient guest service
  • Complete recaps for each shift, and post-convention notes for each private event groups
  • Complete monthly business recaps for each of the outlet venues
  • Exercise quality control for both food and beverage
  • Responsible for short and long term planning and the management of the hotel outlet operations in the front and back of the house
Minimum Qualifications / Other Expectations:
  • 4 years or more of progressive hotel F&B management experience
  • Experience in implementing new food & beverage concepts
  • Proven leadership skills
  • Communication, people skills, organization skills, ability to handle multiple tasks.
  • Valid Serve Safe, CA food handlers card required
  • Proficient in Microsoft and/or Google Suite
